Parkash Kaur Dhillon was born February 2nd, 1938 in Medan, Indonesia and was the eldest of 2 siblings. After losing her mother at 2 ½ years old, she moved to Punjab, India and was raised by her Nani and mami (Auntie). Ever intelligent and caring, she would often teach her younger cousins' math, science, and cooking. As a young adult, Parkash earned a BSc in science from DAV College in Amritsar. Parkash met Mohan Singh Dhillon in 1962 and married him in January 1963. They then set off to England to begin their new life together.

Settling in Cranford, England, Parkash and Mohan had 3 children: Roma, Raju, and Jessie. She worked for Pan American airlines and had a love of the music of Mick Jagger. Parkash helped many young immigrants make their start and become established in English society. An exceptional cook, she provided food and support to all who needed it. Not one person ever went hungry who came to her house for over 40 years.

After 4 decades in England, Parkash and Mohan moved to Southern California where Parkash spent the next 21 years with her family in Laguna Niguel. An avid reader, Parkash loved to read autobiographies (though she could also regularly be found watching soap operas). She was a devoted grandmother and enjoyed going out to restaurants with her friends and family. Although this time in her life was more restful, she never stopped caring. Her tradition of providing, supporting, and cooking for everyone never wavered as she continued to feed and uplift all those who entered her house. She was the glue of the family and a beloved matriarch who touched innumerable lives during her during her 87 years on Earth. She is survived by loving children: Roma (SIL – Nirmal), Raju, Jessie (SIL – Narinder) and grandchildren: Karam, Aaron, and Jasmyn.
